This day I love.......

I love a good food challenge so when Primula cheese got in touch with the challenge of Summer sides, I simply could not resist!

Our first summer side is Cauliflower cheesy garlic bread

Ingredients

1 Cauliflower
4 eggs
1 tube Primula cheese with chives
Parmesan cheese
1 tube Primula cheese
Oregano
Garlic - to taste [I used 1 clove pureed]


Method

1. Pre heat the oven to 200C
2. Line a baking sheet with paper
3. Place chopped cauliflower into a food processor and blitz.
4. Place cauliflower into microwaveable bowl, cover and microwave for 10 minutes
5. Add eggs, Oregano, garlic, and 1/2 tube Primula cheese with chives to the cauliflower and mix in well
6. Spoon mixture and flatten onto the baking sheet
7. Place in over and bake until golden brown, around 25 minutes
8. Take out of oven and spread a layer of Primula cheese topped with Parmesan cheese
9. Place in oven for 5 minutes.
10. Cut into pieces and serve. 

Spinach and cheesy garlic stuffed mushrooms

Ingredient

Large mushroom
Spinach
Clove garlic
Grated cheddar cheese
Prawn Primula


Method

1. Heat a little butter in a pan and once melted add in the garlic
2. Next add the spinach until it wilts.  Use as much spinach as you would like for the mushrooms.
3. Scoop spinach mixture into the mushroom and cover with primula cheese
4. Add grated cheese on top
5. Fry filled mushroom in a griddle pan until it browns
6. Place the mushroom under the grill until the cheese melts [optional but makes it extra tasty]

Dough balls with cheesy dip

Ingredients

450g Self raising flour
80g butter
1 teaspoon salt
approx 250ml milk


Method

1. Pre heat oven to 200C
2. Place salt, flour and butter into a bowl and mix well using your fingers to work the butter into the flour
3. Add the milk a little at a time until the mixture forms a dough.  You may need more milk.  If the mixture gets sticky add flour.
4. Roll the dough into balls and place on a baking tray.  We had enough to make 25 balls.
5. Place in oven for around 15 minutes or until golden.
6. Dip the dough balls in the cheesy dip and enjoy

To make the cheesy dip squeeze your favourite flavour Primula cheese into a tub!

This is one of my favourite pictures of me and my girls.


It was taken a few years ago in one of my favourite places, Scarborough.  My girls are my favourite people, they make me laugh and they make me smile.  Seeing them happy makes everything worth while and I do not know what I would do without them,

We were recently sent three tubes of Primula cheese and challenged to have some squeezy fun.  The Primula Kids range has no artificial colours, flavours or preservatives and reduced salt as well as added calcium.  We thought about having some fun with crackers or sandwiches but decided we would first have some fun with homemade pizza.

My eldest loves to make pizza and it is often a treat for her to make the dough.  After school this week we made pizza dough.  We got creative with out Primula cheese by adding a squirt into the crust to make a stuffed crust edge and then drew a face on our pizza.







Our dogs were looking at us rather eager for some of our pizza, so after a quick google search I discovered Primula cheese is good for dogs too.  We decided to make some dog biscuits.

Doggy biscuits

2 cups whole wheat flour
1/2 cup oats
water - enough to thicken the dough
Chicken stock
Primula cheese
1 egg

My daughter mixed the ingredients together in a bowl, adding in the water carefully so as to not make the dough too sticky.  We added in a squirt of Primula to give it a cheesy flavour.  After we had our dough we used cutters in the shapes of gingerbread men, squirrels, love hearts and birds to make our biscuits.  We placed them on a greased tray and put in the oven 200C for 18 minutes. 


 Once the biscuits had cooled down we used Primula cheese to decorate the tops of the biscuits


Although my eldest soon discovered that she could take the Primula cheese out of the tube.


Not wanting to taste the dog biscuits myself, we decided to give them to our dogs


They were a huge hit.  Both dogs loved them.  

It was a lovely way to spend some time with my daughter after school and a good way to build a bond with our new dog.  We definitely had some squeezy fun in the kitchen with Primula cheese.

Day 2 without the Dummy

Last night my youngest slept through, something she has never really done before.  She woke up at 6.30am, happy and smiling.  She came and gave me a cuddle as usual and we went for breakfast.  It was then she asked for her dummy.  I said all gone, showed her the tub where they used to be was empty and she proceeded to carry on as normal.  That was the only request all day, no mention for it at bed either.

I cannot believe how much my youngest chatters away.  She has never done this before, I think now the dummy has gone she is trying new words and sounds.  Her sentence structure is amazing, something else new she has started to do.  Her favourite phrase these past two days has been 'I don't know'.  The thing I love, now that she has not got that dummy in, is I can see her beautiful smile.  

We have had rather a busy day today.  The girls replanted their sunflowers as they had out grown their little pots.

I then made the girls lunch.  Yes I cut out the cheese shapes myself.

Before we headed out to walk the dog.  What started out as a nice walk with the dog, soon turned into some rainy muddy fun!  Our dog has just figured out how to swim, and takes every opportunity to show off his new skill.  The girls decided to follow.

All this digging and swimming led to one thing, wet feet!

J new found confidence with water has also led him to another new discovery, he can fish!

Without that dummy in her mouth my youngest made an attempt at dandelion clocks, something she had never done before.

It might not have been a very successful attempt, but it was so lovely watching her try, followed by her chatting away.  We returned back to the car to go home, both girls took great pleasure in taking off their boots and socks so they could warm their feet in the sun coming through the window.

Discovery foods really do make Mexican meals easy.  We have enjoyed them in the past and so when they contacted me to tell me they had launched a new Instagram page and to celebrate they were running a competition, well I had to enter.

I created Cajun Pirate boats.

I followed the recipe on the Cajun Chicken season sauce, to make my Cajun chicken.  I then filled the Discovery Taco with the Cajun chicken and sprinkled on top some grated cheese.  I placed two slices of red pepper to create a mast and half a baby tomato to create a ships wheel.

I finished off by decorating the plate with Discovery foods Garlic and Herb soured cream, which I made to look like the whites of the waves as the boat sails along the plate.

I also made the girls treasure chests, which was a taco filled with peppers, grated cheese and a small amount of the chicken,  I then used another taco on top to form a lid, which looked like a pirate chest.

My eldest daughter requested pizza for her lunch today.  I thought it might be fun if we experimented and made our own pizza.  Here is what we did

Ingredients:

Tortilla Wraps [we used 3]
Tinned chopped tomatoes 
Grated Cheese
Toppings of your choosing

Method:

1. Preheat oven to 180 C

2. Use cookie cutters to cut out shapes in the Tortilla, we went for stars, circles and snowmen

2.  Place shapes onto baking tray and lightly cover with chopped tomatoes.  [We heated our tomatoes in a saucepan first just to squash them down a bit and make the sauce easier to spread, but this is up to you]

3. Add Cheese on top

4. Add your toppings, we went for Pepper and Mushrooms

5. Place baking tray in pre heated oven for 10 mins or leave until cheese is melted to your taste

 It was really quick and simple to do and taste lovely.  My daughter really enjoyed making her own pizza and I found it a great way to involve her in preparing food.  We will be doing this again as we had lots of fun.
