This day I love.......

I love a good food challenge so when Primula cheese got in touch with the challenge of Summer sides, I simply could not resist!

Our first summer side is Cauliflower cheesy garlic bread

Ingredients

1 Cauliflower
4 eggs
1 tube Primula cheese with chives
Parmesan cheese
1 tube Primula cheese
Oregano
Garlic - to taste [I used 1 clove pureed]


Method

1. Pre heat the oven to 200C
2. Line a baking sheet with paper
3. Place chopped cauliflower into a food processor and blitz.
4. Place cauliflower into microwaveable bowl, cover and microwave for 10 minutes
5. Add eggs, Oregano, garlic, and 1/2 tube Primula cheese with chives to the cauliflower and mix in well
6. Spoon mixture and flatten onto the baking sheet
7. Place in over and bake until golden brown, around 25 minutes
8. Take out of oven and spread a layer of Primula cheese topped with Parmesan cheese
9. Place in oven for 5 minutes.
10. Cut into pieces and serve. 

Spinach and cheesy garlic stuffed mushrooms

Ingredient

Large mushroom
Spinach
Clove garlic
Grated cheddar cheese
Prawn Primula


Method

1. Heat a little butter in a pan and once melted add in the garlic
2. Next add the spinach until it wilts.  Use as much spinach as you would like for the mushrooms.
3. Scoop spinach mixture into the mushroom and cover with primula cheese
4. Add grated cheese on top
5. Fry filled mushroom in a griddle pan until it browns
6. Place the mushroom under the grill until the cheese melts [optional but makes it extra tasty]

Dough balls with cheesy dip

Ingredients

450g Self raising flour
80g butter
1 teaspoon salt
approx 250ml milk


Method

1. Pre heat oven to 200C
2. Place salt, flour and butter into a bowl and mix well using your fingers to work the butter into the flour
3. Add the milk a little at a time until the mixture forms a dough.  You may need more milk.  If the mixture gets sticky add flour.
4. Roll the dough into balls and place on a baking tray.  We had enough to make 25 balls.
5. Place in oven for around 15 minutes or until golden.
6. Dip the dough balls in the cheesy dip and enjoy

To make the cheesy dip squeeze your favourite flavour Primula cheese into a tub!

Between 5th and 13th March Sunrise care home communities are inviting the public to meet their talented chefs, sample their delicious and nutritious food and take home a free Taste of Sunrise Recipe Book when they take a tour of the community, the closest to me is the nursing home in Bramhall.  I have been sent one of the Taste of Sunrise new recipe book to try.  The book contains signature dishes designed by Michelin star chefs and I have been eager to give it a try.

I love discovering new recipes and ideas, such as the winter stew which they add bacon to.  We found this a great addition to a classic.  Warming and very filling.  The book had something for everyone.  My daughters though both loved the Sunrise smoothie,  A great combination of fruit and a perfect breakfast drink also

We love Fish and Chip Friday in our house, it is our weekly treat and one the girls really look forward to.  In fact I am pretty certain if you were to ask the ultimate question 'Daddy or Chips?' both girls would answer chips.  Now that Christmas and the festive period is out the way, we are getting back into our normal routine and back to our traditions, like Fish and Chip Friday.

It is nice getting back into a routine again and getting back to normal, but with it comes the girls after school clubs and the need to make quick and easy dinner.  When McCain got in touch with their back to normal campaign, I instantly knew I wanted to be involved.

I thought this a great opportunity to share our simple fish cakes that are quick, easy and fun to do with the children and are great when accompanied by McCain Chips, particularly their Crispy Sweet Potato Fries

Ingredients

To make Fish cakes:

1x tin tuna
1x tin Salmon
3x eggs
125g Mozzarella [shredded]
3x chopped spring onion
Oats

Plus McCain chips

Ingredients for Fish and Chip friday

Method

1. Pre heat the oven for your McCain Chips
2. Mix together in a bowl all ingredients for Fish cakes.  The oats are only needed if the mixture is not thick enough.
3. If Mixture does not stick together, then add oats a few at a time until the mixture is thick and can stick together
4. When over is hot enough add McCain Chips.
5. Add oil to a Frying pan, and ensure pan is hot.
6.When pan is hot, spoon fish cake mixture into pan [in balls] to make individual fish cakes.
7. Fry for a few minutes before turning over
8. When golden on both sides fish cakes are ready.  They should only take a few minutes
9. Remove cooked McCain chips from oven.
10. Serve Fish cakes and Chips together, and Enjoy

You can add a variety of ingredients into the fish cakes to alter the taste, different fish, peas or even chopped spinach or kale.  If the mixture is too thick add another egg and use oats to re thicken.  The fish cakes can also be made to different sizes to suit different sized tummies!

With Halloween just around the corner we thought this would be a perfect excuse to put the new Blend-Active through its paces.  The new Blend-Active Pro has a sleek black finish and has improvements over the original Blend-Active.  The sports cap has a lock open feature, there is a rubber grip around the bottle which is sleeker in design and the blades have a handy cap which means you can now chop nuts.  Another great feature is the light which illuminates to indicate the bottle is attached correctly so you can begin blending.


I gathered together lots of different fruits, vegetables and other foods and set to work experimenting with the girls help.  Finding out what flavours worked well together and which really did not.


The girls created three recipes.

1. Vampires blood

13 red grapes
13 raspberries
13 strawberries
1 pear
Apple juice

The girls preferred to sieve the juice afterwards to remove any lumps but this is optional


2. Graveyard Mud

2 banana
4 Oreo cookies
Milk

This was their favourite out of all the combinations we made.  You could also add a spoon of cocoa powder if you wanted to make it a darker colour. 


3. Frankenstein 

2 small apples
handful spinach
cucumber
Apple juice
Lime to taste

This was my favourite of the three and was a really refreshing drink.

Did you know that there are more than 27,000 internet searches in the UK each month for 'gluten free diet'  that is a lot of people going gluten free and a lot of inspiration to be found.

Tilda rice would like to match this need and have created six gluten free recipes to show how cooking with naturally gluten free basmati rice can be delicious, healthy and easy to do.  I have been getting creative and trying not only the gluten free ideas from Tilda but also looking at other ways to use Tilda rice.

The six recipes from Tilda are

•  Lamb and quince meatballs with Basmati and Wild (using Tilda Wholegrain Basmati & Wild Rice)
•  Spicy rice and Vegetable bake (using Tilda’s Pure Basmati Rice)
•  Chicken with apricots and tamarind on herby rice (using Tilda Wholegrain Basmati Rice)
•  Warm chickpea and feta quinoa and rice salad (using Tilda Steamed Brown Basmati & Quinoa)
•  Salmon on broad bean rice (using Tilda Steamed Pure Basmati Rice)
•  Chicken, hazelnut and prune salad (using Tilda Steamed Brown Basmati Rice)

I was keen to try the Brown Basmati rice and Quinoa, as am currently a huge fan of Quinoa.  I warmed the rice as per the instructions and mixed with feta cheese, spinach, cucumber, chick peas and pepper.  I had made a garlic and ginger dressing which I added on to the rice and squeezed in some fresh lime juice.


The result was delicious and perfect for lunch time, easy to make.


One of my favourite dishes to make is a chicken chick pea curry.  By frying chicken with onion then adding chili powder, cumin and garlic to the pan to add favour before adding chick peas and spinach.  It makes a wonderful curry dish and perfect for serving over rice.


 Sun dried tomato basmati has a great tomato flavour to it and it perfect with some mixed baby leaves, spinach, red peppers and cucumber.  It is great for both a lunch and a light dinner.


Tilda rice is also perfect as a side dish with a stew, one of my favourites is a celery stew.  It has lots of tasty flavour and really refreshing and filling.


Tilda is a perfect accompaniment or amazing within the dish and can be quick and easy to cook thanks to the handy microwave packets.

I love a challenge and the lovely people over at Jus Rol  decided to set me a spring themed challenge. They wanted me to take some of their Jus Rol pastry and create a spring inspired recipe. I began to think.

When I think of spring I think of chickens (possibly due to Easter, who knows), blossom, spring sunshine and the colour green. I wanted to use these inspirations in my recipe and came up with the following

Ingredients

250g natural yoghurt
1/2 teaspoon saffron
1/2 teaspoon sugar
500g chicken
1 sheet of Jus a Rol short crust pastry
Selection of green beans and vegetables : I used trimmed beans, magnetout, sugar snap and baby corn

Jus Roll recipe

Method
1. Pre heat oven to 180c
2. Grind the sugar and saffron together to make a powder and stir into the natural yoghurt. Put mixture to one side
3. Brown the chicken in a frying pan, once cooked add the vegetables to the pan for 2-3 minutes.
4. Place a sheet of banking paper onto a baking sheet and roll out the shortcrust Jus rol pastry on top.
5 spoon the chicken and veg mixture onto the top of the pastry leaving around 2cm at the edges.
6. Using your fingers turn up the edges of the pastry and pinch to form an edge.
7. Bake in the oven for 25minutes, or until edges of pastry are turning golden brown.
8. Remove from the oven and pour over the saffron yoghurt mixutre.
9. Place back into the oven for a further 5 minutes
10. Serve and enjoy.

I used chicken as my meat as from my original thought process on spring. The green beans and veg are from the initial thought of green. I thought the dish would be a little dry without a sauce or topping so created the yoghurt and saffron topping to add some flavour. The smell of saffron reminds me of the blossom which I also associated with spring. The whole dish has a wonderful yellow glow and warmth which is similar to the spring sun.

The whole dish is simple to create and thanks to jus rol ready to roll pastry everything was quick and simple. The saffron adds s beautiful delicate flavour to the dish and for me is light enough to remind me of spring.

I love cricket.  It is one of my favourite sports to watch and to play.  I love the logic and the tactics behind it, as well as the skill involved.  The cricket world cup is on at the moment, 14 of the worlds best cricket teams are competing in Australia and New Zealand.  Of course I am wanting England to win but feel it highly unlikely at the moment, my money is on either Australia or India.

With the challenge of the World cup well under way, I was set my own challenge by Betfair.  I was challenged to create a recipe inspired by one of the teams taking part in the world cup.  I have to admit this challenge had me a little stumped.  First I had to pick a team, do I go with England who I would love to win, Australia or India who I think will win or someone else.

I had a couple of ideas but I knew I had to include a few things.  First I wanted a food item to represent stumps, a second to represent a bat and third I wanted to include pomegranates.  Now the pomegranate thing might seem strange, and I shall apologies in advance if this should offend anyone, but I could not not include the reference.  A term occasionally used by some Australia and New Zealand for a British person is Pommy.  I have heard its use in cricket matches as affectionate abuse, a way if you like to wind up the England team before a match.  More often than not it is light hearted banter but the fact the world cup is taking place in Australia and New Zealand and my will for the England team to win meant I had to include it.

I began therefore by looking at where the pomegranate originates, Iran.  Doesn't help me as they are not in the world cup.  I then started thinking of ideas of things to do with the pomegranate, food wise.  I decided to make a marinade and perhaps cook some chicken in it.  

I made a marinade using 1/2 pint pomegranate juice to 1/2 cup sugar.  I poured the mixture over the chicken and it smelled amazing.  The sauce was a sweet shiny red colour, and it reminded me of the shiny red of the new cricket ball.  The marinade reminded me of Caribbean chicken, and that is when I picked my team West Indies. 

I checked to see if pomegranate had a connection to Caribbean and was pleased it did.  I then set about choosing my ingredients to represent a bat and stumps.  I decided that corn and sweet potato would work well and they both have a Caribbean inspired flavour to them, I had a Howzat moment.

Here is my 'Sweet six' West Indies inspired cricket recipe

Ingredients

Pomegranate juice 1/2 Pint
Sugar 1/2 cup
6 pieces of chicken
4 corn on the cobs
6 sweet potatoes

Method

1. Pre heat oven to 200c
2. Peel sweet potatoes, and cut into stumps.
3. Mix Pomegranate juice and sugar together to make a marinade.
4. Place chicken in a roasting tin and pour over marinade.
5. Par boil the sweet potato stumps and then place in a separate roasting tin, drizzle with oil.
6. Put the chicken into the oven for 10 minutes, then place the sweet potato into the oven.  Cook both for 25 minutes or until juices run clear on chicken and sweet potatoes are cooked through.
7. Bring a pan of water to boil and place in sweetcorn, cook until desired texture. approx 10 minutes

Pomegranate chicken

Serve and enjoy

This is a real fast bowler, with a lovely sweet curve ball thrown in that both adults and kids enjoy.

December sees the start of beautiful warm puddings, or at least it does for me.  One of my favourites is Bread and Butter Pudding.  It is a family favourite at Christmas in our house too.  Here is our quick and simple recipe which I have adapted from Assisted Living at Sunrise of Bramhall

Ingredients

100g Sugar
Butter
500ml a2 whole milk
2 eggs
250g Panettone

Method

1. Preheat the oven to 180C/Gas 4 and ensure the tin is greased
2. Slice the Panettone and butter the slices.  Arrange the buttered slices into the greased tin
3. In a separate bowl cream together the sugar, a2 milk and eggs.  
4. Pour the creamed mixture over the sliced panettone.
5. Bake for 30-40 minutes until golden brown


Using the Panettone means less ingredients, you don't need to worry about currents and spices, although you can add these if you wish.  


The Panettone adds a beautiful flavour to the traditional bread and butter pudding.  Even the girls enjoy eating it


We have loved using a2 milk in our recipes and a2 milk has not altered the taste of any of our creations.

Back in September I started posting monthly ideas for a2 milk.  I started with something cold and showed that a2 can be used frozen and still taste great.  In October I used a2 milk in the slow cooker and with meat.  For this month I thought I would stick to my Yorkshire roots and use a2 milk to make Yorkshire puddings and mash potatoes.

Yorkshire Puddings

Ingredients

140g plain flour
4 eggs 
200ml a2 milk
sunflower oil, for cooking

Method

I follow the following method for Yorkshire puddings.

I also made mash potato.  After peeling potatoes I find that if you cut the potato into small pieces it makes it easier to mash.  After the cut potato have been in boiling water and are soft, drain off the water and mash the potatoes.  Add a lump of butter and a dash of a2 milk to make the mash really creamy.

Prepare gravy and fry sausages.

This is perfect comfort food for those cold winter nights and both girls enjoy it

a2 milk is proving to work well in both savoury and sweet dishes and using a variety of cooking techniques.  My final recipe with a2 milk will be next month.

I decided to try something new for our October recipe.  I wanted something nice and simple and with the cold weather also nice and comforting.  I settled on slow cooked pork in Milk.


After browning the pork tenderloin in a pan, the quantity of pork is entirely dependant on how many you are feeding, I used 800g to feed 4, I placed the browned pork in the slow cooker.  I sprinkled the pork with salt and pepper and added some mixed herbs.  Finally I added the milk.  The milk should come about half way up the sides of the pork.

Cover and cook on a low heat for about 6 hours until it is fork tender.  Leave to rest on a plate for 10 minutes prior to serving.


The milk in the slow cooker needs to be blitzed with a food processor after cooking in order to create a nice creamy sauce which can be poured over the pork.  Alternatively if you do not want the sauce just serve the pork as is.

The pork is really tender and the milk adds a nice flavour.  We had some left overs so I made a pork sandwich for lunch the day after.

We were recently sent three tubes of Primula cheese and challenged to have some squeezy fun.  The Primula Kids range has no artificial colours, flavours or preservatives and reduced salt as well as added calcium.  We thought about having some fun with crackers or sandwiches but decided we would first have some fun with homemade pizza.

My eldest loves to make pizza and it is often a treat for her to make the dough.  After school this week we made pizza dough.  We got creative with out Primula cheese by adding a squirt into the crust to make a stuffed crust edge and then drew a face on our pizza.







Our dogs were looking at us rather eager for some of our pizza, so after a quick google search I discovered Primula cheese is good for dogs too.  We decided to make some dog biscuits.

Doggy biscuits

2 cups whole wheat flour
1/2 cup oats
water - enough to thicken the dough
Chicken stock
Primula cheese
1 egg

My daughter mixed the ingredients together in a bowl, adding in the water carefully so as to not make the dough too sticky.  We added in a squirt of Primula to give it a cheesy flavour.  After we had our dough we used cutters in the shapes of gingerbread men, squirrels, love hearts and birds to make our biscuits.  We placed them on a greased tray and put in the oven 200C for 18 minutes. 


 Once the biscuits had cooled down we used Primula cheese to decorate the tops of the biscuits


Although my eldest soon discovered that she could take the Primula cheese out of the tube.


Not wanting to taste the dog biscuits myself, we decided to give them to our dogs


They were a huge hit.  Both dogs loved them.  

It was a lovely way to spend some time with my daughter after school and a good way to build a bond with our new dog.  We definitely had some squeezy fun in the kitchen with Primula cheese.

Last month I ran a giveaway for a2 milk, along with explaining a little more about a2.  Having used a2 now for some time I have put together some ideas of ways a2 can be used and does not alter the taste.  I will be featuring a new idea or recipe each month.

This months recipe is one to refresh and cool, but also makes a healthy treat.

Strawberry and banana lollies

750ml a2 semi-skimmed milk 
200g caster sugar 
1 tsp vanilla extract (optional) 
2 Bananas
Handful of strawberries
1 Mix the milk with sugar to taste and stir until the sugar has dissolved, then mix in the vanilla extract.
2 Chill the milk until nearly frozen.
3 Mix the milk and mashed banana together.
4 Add in chopped pieces of strawberry.
5 Pour into the ice lolly moulds right away, place the stick in their middle and freeze.
6 When frozen hard, take out of the moulds and serve.

Other fruit could also be used but strawberries and banana are a personal favourite of mine.  Do let me know how you get on and if you have any ideas you would like to see.

Lurpak have recently launched their new Lurpak Slow churned butter, which is inspired by traditional production methods.  It is made by slowly churning cream over five hours in small batches.  Lurpak claims this results in a fuller tasting flavour, well we had to put this to the test!

The girls and I made two batches of cookies, well I can't think of anything better really.  Once batch used Lurpak slow churned and the other used a supermarket own brand butter.  We followed the following recipe, after I managed to convince my daughter it was a bowl and not a hat!

Ingredients

250g Plain flour
1/2 tsp Bicarbonate of soda
1/2 tsp salt
170g unsalted butter
200g Brown sugar
100g Caster sugar
1 tbsp Vanilla extract
2 Eggs
325g Chocolate chips

Method 

1. Preheat oven to 170C, Gas mark 3.  Grease baking trays
2. Stir together flour, bicarbonate of soda and salt.

3. In a separate bowl mix melted butter, brown sugar and caster sugar. 
4. Beat in Vanilla and the eggs until creamy.

5.  Mix both bowls together and stir in the chocolate chips.

6. Place cookie dough onto baking trays to make your cookies.

7. Bake for 15-17 minutes until golden.  Allow to cool.

After the cookies had cooled down it was time to put them to the taste test.  Each batch was placed on a different plate and sure enough one plate disappeared much faster than the other

Lurpak slow churned butter really does make a difference in cookies and gives them a much fuller taste!  I can't wait to try some on my toast!

It has rained all day today.  Even the dog refused to go outside.

They did not want to go out either.  Instead we stayed inside to play.  We decided to do some cooking.  I had been told by someone I met at work that you could make brownies using a jar of Nutella, 2 eggs and half a cup of flour.  I figured I would give it a go!

Ingredients

1 400g Jar of Nutella
1/2 cup of Self raising flour
2 eggs

Method

1. Pre heat oven to 180C
2. Line a 20cm square baking tin
3. Add all ingredients into a bowl and mix together
